Broiled Sole

I eat a lot of fish. It is the only meat I eat so I tend to eat it often. A year ago my family vacationed in Mexico. The last day we got some fresh fish and my Dad and I opened the refrigerator to see what foods we had left from our week there that needed to be eaten. From those items, we created a delicious fish dish. Here it is.

Place a layer of sole (or other fish, depending on availability) on foil lined broil pan.

Spread with salsa verde

Top with queso fresco

Sprinkle with hot sauce

Top with sliced tomatoes

Broil till done!
