Salmon with Gremolata and Tomatoes

Ingredients
1/2 cup fresh parsley, finely chopped
2 tablespoon freshly grated lemon zest
3 tablespoon olive oil
4 cloves garlic, minced fine
1 ½ pounds cherry tomatoes
One -1 pound salmon filet

Heat oven to 425°.

Cut tomatoes in half, remove seeds and put in bowl with 1 tablespoon of the oil and half the garlic — mix well.

Put in oven for 15 minutes.

While it cooks, mix parsley, lemon zest, olive oil and garlic and cover top of salmon.

Turn oven to broil and place salmon about 2 inches away from heat source — and move tomatoes to below salmon.

Broil salmon about 10 minutes, serve with tomatoes.

Serves 6.
