Do yourself a favor and keep some ravioli in the freezer. You can cook them from frozen and will be able to bust this out in only a few minutes.
Ingredients
1/4 cup butter
Juice of 1 lemon
1/2 pound large sized ravioli, I like cheese but you choose whatever you like
2 tablespoons fresh mint leaves, finely chopped
Fresh ground pepper
Parmesan cheese, shredded
Cook ravioli according to package instructions.
While it cooks, melt butter in small pot with lemon juice and stir. Drain ravioli and add to pot with butter and lemon, stir well.
Put on serving platessprinkle with mint, pepper Parmesan.
Serves 4.
