Steamed Won Tons

Ingredients
1/4 pound firm tofu
1/2 cup carrots, coarsely grated
1/2 cup shredded Napa cabbage, plus leaves for steamer
3 tablespoons red pepper, finely chopped
1 scallion, finely sliced, white portions only
1 clove garlic, sliced and made into paste with salt
1 tablespoon fresh ginger, grated
1 tablespoon chopped cilantro leaves
1 tablespoon soy sauce
1 tablespoon seasoned rice wine vinegar
2 teaspoons sesame oil
1 teaspoon cornstarch slurry (constarch plus water)
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 package small won ton wrappers (40)
Spring onion, for garnish

Cut tofu in half horizontally and place between layers of paper towels. Place on a plate, top with another plate, and weigh down. Let stand 20 minutes, then cut the tofu into 1/4-inch cubes.

In the meantime, combine cabbage, carrots, red pepper, cilantro, garlic, ginger, and scallion in a bowl and gently mix ingredients together with soy sauce, seasoned rice wine vinegar, and sesame oil. Add the tofu cubes and cornstarch slurry.

To form the dumplings, remove 1 won ton wrapper from the package, covering the others with a damp cloth. Using your finger or a brush, wet the edges of the wrapper lightly with water. Place 1 rounded teaspoon of the tofu mixture in the center of the wrapper. Fold in half to form a triangle and seal the edge. If desired, wet the inside of one side of the triangle and wrap the tips together, overlapping by 1/4 inch, and press to seal. Set on a sheet pan and cover with a damp cloth. Repeat until no filling remains.

Using a steamer, bring 1/2-inch of water to a simmer over medium heat. Layer the steamer surface with a few leaves of cabbage. Place as many dumplings as will fit into the steamer, without touching one another. Cover and steam for 5 minutes over medium heat. Serve with dipping sauce. Top with spring onion.

Dipping Sauce
1/4 cup seasoned rice wine vinegar
2 tablespoons soy sauce
1/2 tablespoon toasted sesame oil
2 tablespoons scallion, thinly sliced
1 tablespoon ginger root, grated

Combine all ingredients in a medium-sized bowl. That's it!
