Ingredients:
2 cups watermelon
1 large cucumber, seeds discarded, peeled
1 small red pepper, diced, seeds removed
1 small yellow pepper, diced, seeds removed
2 fresh, ripe tomatoes, quartered or 2 cups cherry tomatoes
1 seeded jalapeno (or 1/2 to 1 tablespoon favorite hot sauce, to taste)
3 tablespoons freshly picked mint
¼ red onion, chopped
1½ tablespoons red wine vinegar
4 tablespoons EVOO
Kosher salt and freshly ground black pepper, to taste
Add all ingredients to a blender and blend. Season to taste with salt and pepper.
