Ingredients:
2 tablespoons EVOO
2 cups yellow onion, small dice
1 teaspoon fresh thyme
1 clove garlic, minced
1 tomato, core discarded, chopped
2 tablespoons Worcestershire sauce
1/2 teaspoon Dijon mustard
3/4 cup homemade or Italian breadcrumbs
1/3 cup chicken stock
2 eggs, whisked
1 1/2 pounds ground turkey
1 pound ground round, beef
3/4 teaspoon Kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup ketchup
Preheat the oven to 350 degrees F.
In a large sauté pan over medium heat, add the EVOO and onions. Cook until the onions begin to brown, 8 minutes. Add the garlic and thyme and cook until fragrant. Next add the tomato and Worcestershire sauce, mix, and then remove from the heat to cool. In a large bowl gently combine the turkey, beef, breadcrumbs, eggs, Dijon, seasoning, and onion mixture only until just combined. Do not over mix. In a loaf pan, shape the loaf and lastly spread the ketchup evenly over top. Bake until the internal temperature hits 155 degrees F. The loaf will naturally carry over to 160 degrees F, which is considered safe for ground turkey.
