Ingredients:
4 tomatoes, halved
2 garlic cloves, minced
2 tablespoons fresh thyme, chopped
3 tablespoons EVOO
1 tablespoon good quality balsamic vinegar
1½ teaspoons Kosher salt
A few good grinds of black pepper
Set oven temperature to 425 degrees F. On a foil lined sheet pan, place the tomatoes flesh side up. Season the tomatoes with salt, pepper, garlic, thyme, balsamic, and lastly the EVOO. Roast in the oven for approximately 10 minutes or until nicely colored. Garnish with watercress.
