Ingredients:
2 tablespoons EVOO
1/2 teaspoon freshly squeezed lemon juice
3 tablespoons cream
1 tablespoon parsley, chopped
2 tablespoons freshly picked mint, torn
2 shallots, finely chopped
Kosher salt and freshly ground black pepper
3/4 cup walnuts, toasted and crushed
1 bag, 10 ounces, mixed greens
1 cucumber, peeled, seeded, halved, and cut thin on an angle
Dried cranberries, optional
Instructions:
In a small bowl, whisk together the EVOO with the lemon juice. Next, whisk in the cream until thickened. In a second small bowl combine the parsley, mint, shallots, and walnuts. In a large bowl add the lettuce, and cucumber. Just prior to serving, add the dressing (dress the salad lightly), mixing in the herb mixture and topping with the cranberries. Season to taste.
