Ingredients:
1 pound mixed olives, rinsed and drained
Zest from 1 orange (use a peeler)
4 cloves garlic, smashed
2 springs rosemary, stems bruised with your hands
EVOO, to cover
Combine all of the ingredients in a small saucepan and heat over a very low flame for 20 minutes, or using an oven safe saucepan, place into the oven set at 250 degrees for 30 minutes. Serve warm, being sure to supply your guests with a second dish for the pits. Store excess marinated olives, covered, in the refrigerator for up to a week.
