Ingredients:
4 cups whole milk
1 cup coconut milk
1 cup honey
1/2 teaspoon pure vanilla extract
3 tablespoons dried lavender buds, slightly crushed
1 pinch of salt
Combine the milk, coconut milk, honey and vanilla extract in a medium saucepan. Carefully bring to simmer over medium heat, stirring to dissolve the honey. Next whisk in the lavender and salt. Remove from the heat, cover, and allow the mixture to steep for 30 minutes at room temperature. Strain through a fine sieve or cheese cloth into a shallow container and chill in the refrigerator until very cold, at least 1 hour. Transfer the mixture to an ice cream machine and freeze according to the manufacturer’s directions.
