Eggs: Three Ways

Have fun with these recipes and make them your own by adding a tablespoon of freshly diced tomatoes, some sliced spinach or a perhaps a different cheese. 

Shirred Eggs

Ingredients:
1 whole egg
1/4 teaspoon unsalted butter
1/2 teaspoon freshly picked thyme
1/2 teaspoon freshly picked oregano
1/2 tablespoon Parmigiano-Reggiano, Asiago, or Mozzarella cheese
Kosher salt and freshly ground black pepper
1 teaspoon cream
1/2 teaspoon basil and Italian flat-leaf parsley, chopped, optional

Preheat the oven to 450 degrees.
In a small, oven-safe ramekin, grease the bottom and sides with the butter or with non-stick spray.  First add the herbs, followed by half the cheese, then the egg, season lightly, the second half of the cheese, then the cream.  Place on a sheet pan and then into the oven, on the top rack, for approximately 12 to 14 minutes.  The white should be just set but the yolk still runny.  Remove, top with the basil and parsley, and serve.

Fried Eggs

Ingredients:
1 whole egg
1/2 teaspoon unsalted butter
1/2 teaspoon freshly picked thyme
1/2 teaspoon freshly picked oregano
1/2 tablespoon Parmigiano-Reggiano, Asiago, or Mozzarella cheese
Kosher salt and freshly ground black pepper
Basil and Italian flat-leaf parsley, chopped, optional

In a non-stick pan over medium heat, add the butter.  When the butter beings to brown, gently add the egg.  Sprinkle over top the herbs, season lightly, and finish with the cheese.  Place on a lid and cook undisturbed for 1 minute, or until the white is set and the yolk is still runny.  Top with the basil and parsley, and serve.

Scrambled Eggs

Ingredients:
2 whole eggs
1/2 teaspoon unsalted butter
1/2 teaspoon freshly picked thyme
1/2 teaspoon fresh freshly picked oregano
1/2 tablespoon Parmigiano-Reggiano, Asiago, or Mozzarella cheese
Kosher salt and freshly ground pepper
Basil and Italian flat-leaf parsley, chopped, optional
Chopsticks

In a non-stick pan over medium heat, add the butter.  When the butter begins to brown, add the egg, the herbs, and season lightly.  Immediately begin to stir the eggs with the chopsticks.  Continue stirring until the eggs are still a little bit wet but mostly cooked, then add the cheese, stir to combine then immediately remove from the pan.  Top with the basil and parsley.  Serve.
