Rustic Date Pie

Ingredients:
1 teaspoon butter or non-stick spray
4 tablespoons AP (all purpose) flour, plus extra for dusting
3/4 cup brown sugar
2 teaspoons baking powder
1/4 teaspoon cinnamon
1 cup dates, pits discarded, chopped
1 cup pecans, chopped
2 whole eggs
9 inch pie dish

Simply grease the pan with the spray or butter, and then dust with some flour, tapping out any excess.  For the filling: in a medium bowl, combine the sugar, flour, cinnamon, and baking powder.  Add the dates and nuts.  In a second bowl, using a fork, whisk the eggs.  Combine the flour/date mixture into the eggs and mix well.  Pour and press mixture into the pie dish evenly.  Bake at 350 degrees F for approximately 25 minutes, or until a toothpick inserted into the middle comes out clean.  Allow to cool slightly prior to serving.  Works great with cheese.
