Ingredients:
½ cup sugar
1/4 cup good quality cocoa powder
2½ tablespoons cornstarch
2½ cups whole milk
5 ounces semi-sweet chocolate, 62% cocoa content, chopped
1 tablespoon unsalted butter
½ teaspoon pure vanilla extract
Instructions:
In a medium sized sauce pan over medium heat, combine the cornstarch, sugar, and cocoa powder, then slowly whisk in approximately ½ cup of the milk until smooth in texture. Slowly add the remaining milk, and then continuously whisk until thick, approximately 3 minutes. When the mixture thickens, remove from the heat. Slowly stir in the butter, chocolate, and vanilla until fully incorporated. Divide into ramekins or serving bowls. Serve immediately or cover with plastic film directly to the surface to prevent a film from forming. Refrigerate until chilled.
