
Ingredients:
1 large ripe tomato, seeds squeezed out, large dice
1 avocado, seeded, peeled, medium dice
1 small red bell pepper, seeded, medium dice
1 small red onion, small dice
1 large head romaine, chopped, or ½ pound mixed greens
1/3 cup picked flat leaf parsley leaves
1 1/2 tablespoons white balsamic vinegar
1/3 cup EVOO
Kosher salt and freshly ground black pepper
1/4 cup toasted pine nuts, optional
In a large bowl combine the tomato, avocado, bell pepper, onion, greens, and parsley. Using a small container with a lid, or a bowl with a whisk, combine the vinegar with 1/4 cup EVOO and shake, or whisk until emulsified. Lightly dress the salad, using just enough to taste. Season to taste and serve immediately with toasted pine nuts.
