Ingredients:
2 apples, Gala or Fuji – peeled, quartered, cored
3 ounces sugar, granulated
3 ounces butter, unsalted
Good dash of powdered cinnamon
8 inch pastry puff
Zest of 1 lemon
Place the sugar in the bottom of an 8-inch pan and squeeze off small pieces of butter distributing them evenly. Place over low flame so that the mixture begins to melt. Place the apple quarters in a bowl. Add lemon zest and cinnamon then toss to combine. Pack the apple quarters from the center of the pan and move outward, and fill out to the rim. Pack them tightly as they will shrink slightly during cooking. After 20 minutes or once the apples are caramelized, remove from the heat.
Place the puff pastry over the apples, it should look like an inverted bowl, overlapping about 1/2 an inch all around. Bake in the oven set at 375 degrees until the pastry is golden brown in color. Allow to cool at least 15 minutes. Invert carefully onto a plate for service.
