Almond Apple Tarts

Ingredients:
1 sheet puff pastry, thawed according to instructions
1 apple, cored and sliced thin
1/4 cup butter, room temperature
1/4 cup sugar
1/2 cup ground almonds
1 egg
1/2 teaspoon cornstarch
Zest of 1 lemon
1/2 cup crème fraiche
Parchment paper, as needed

Preheat the oven to 400 degrees F.  In a medium sized bowl, while using a fork, mix together the ground almonds, sugar, butter, cornstarch, and egg.  To keep the parchment paper from curling up, lightly butter a cookie pan. Place down the parchment paper then lay down the puff pastry over top. Carefully spread the ground almond mixture evenly across the puff pastry leaving a small boarder around the circumference – 1/3 inch or so.  Layer the sliced apples over the mixture. 

Place in the oven and cook until puffed and golden brown, approximately 12-14 minutes.  Remove the tarts from the oven.  Serve with the lemon crème fresh (combine the zest with the crème fraiche).
