Ingredients
For the dressing:
1/4 cup lime juice
1/4 cup fat free plain yogurt
1 tablespoon honey
1/2 teaspoon minced garlic
2 tablespoons extra virgin olive oil
salt, to taste
pepper, to taste
In a medium bowl, using a whisk, whisk together the lime juice, yogurt, honey and garlic until well combined. Slowly whisk in the olive oil. Season with salt amd pepper to taste. Chill.
Makes 3/4 cup; 6 (2 tablespoon) servings.
For the Salad:
6 cups baby romaine lettuce
1 cup seeded and finely chopped tomatoes
1/2 cup finely chopped red onion
1/4 cup chopped fresh cilantro leaves
1 3/4 ounces queso fresca, divided
1/4 cup Queso Salad dressing (see above for recipe)
Combine the romaine, tomatoes, onion, cilantro and 1 ounce of the queso fresca in a large serving bowl. Add the dressing and toss until combined. Top with the remaining queso fresca. Serve immediately.
Makes 2 (starter or side dish-sized) servings.

Queso Fresca is a Mexican Cheese that is reminiscent to me of a cross between mozzarella and feta. It's found in the refrigerated section of most major grocery stores near other ethnic perishables or near the mozzarella.
