2 lbs. shrimp — 31 - 40 shrimp - uncooked, split and de-veined (can buy in most major supermarkets)
Juice of one lemon
6 tbsp. Maryland crab spice
3 stalks celery
1 stick unsalted butter
2 tbsp. Ranch dressing for celery
Bring 4 quarts water to rolling boil in an 8 quart pot. Season water with 3 tablespoons Maryland crab spice and 1/2 a lemon squeezed. Put 2 lbs. shrimp in pot and turn off heat. Let shrimp cook in water for 4-5 minutes. While shrimp are cooking, microwave 1 stick butter in a bowl for 30-60 seconds until melted. Remove shrimp with slotted spoon and quickly sprinkle more Maryland spice on shrimp while they are still wet. Serve shrimp hot with small ramekins of warm butter and ranch dressing. Garnish with celery slices.
Yields 6 servings - approximately less than one carb per serving
