Chicken Liver Pate:
10 chicken thighs- skin removed
1 lb. chicken livers - tendons removed
1 small onion (approx. 1/4 cup) - fine chopped
1 egg - hard boiled
Salt & Pepper to taste

Coleslaw:
1 package pre-cut cabbage (approx. 4 cups) - shredded
1 cup mayonnaise
2 tbsp. white vinegar
1 tsp. celery seed
3 tbsp. simple syrup (equal parts Splenda & water, heated then cooled)
Kosher salt & Pepper to taste

Thousand Island Dressing:
1/2 cup low carb ketchup
1/2 cup mayonnaise
1 large pickle- diced
2 tbsp. cider vinegar
2 tbsp. simple syrup

Sandwich:
8 slices low carb bread
1 lb. sliced corned beef
12 oz. sliced pastrami
1/2 lb. Swiss cheese - sliced thin

Chicken Pate Preparation: 12 servings = less than 1 carb per serving
Remove skin from chicken thighs and place in casserole. Use skinless chicken thighs for different recipe. Place casserole in oven at 375 degrees for 1 1/2 hours to 2 hours to render chicken fat. Remove casserole from oven and strain fat into bowl. Take rendered fat and place in saucepan over medium heat and add chicken livers which you have removed all tendons. Cook for 4 - 5 minutes. Remove pan from heat and place livers in food processor and puree. Add 1/4 cup of rendered chicken fat to liver puree and pulse. Remove liver from food processor and place in bowl. Stir in chopped onion and hard boiled egg. Season with grated black pepper and salt. Chill in refrigerator until set.

Thousand Island Dressing Preparation: 12 servings = 1 net carb per serving
In bowl add ketchup, mayonnaise, pickle, vinegar and simple syrup and mix until all ingredients incorporated.

Coleslaw Preparation: 12 servings = less than 1 carb per serving
In large bowl place cabbage, mayonnaise, vinegar, celery seed and low carb simple syrup and mix until all ingredients incorporated. Season with salt and pepper.

Sandwich Preparation:
On all slices of bread spread 1 tablespoon of dressing on each slice. Top with 1/4 cup of coleslaw, corned beef, Swiss cheese, Pastrami, chopped liver and remaining slice of bread. Garnish with two green olives, pickle and green tomato.

Yields 4 extra large sandwiches - approximately 16 net carbs per serving
