1 pkg. cream cheese
2 cups low carb sweetener
1/4 cup sifted soy flour
3 - 4 tbsp. cinnamon
Whip cream cheese in mixer and scrapes sides with rubber spatula. In food processor pulse low carb sweetener and soy flour to make powdered low carb sugar. Add powdered sugar to cream cheese and continue to mix until incorporated. Form small teaspoonful balls with hands and roll in cinnamon to coat forming ball into shape of potato. Chill for one hour and serve.
Yields 3 dozen - approximately 1.5 net carbs per serving
