Fried Oysters with Cilantro Cream

1 pint container of oysters - raw & shucked (12 oysters per pint)
1/4 cup soy flour
6 oz. sour cream
1/2 cup fresh cilantro - chopped
1 tbsp. lime juice
Salt & pepper to taste

Preheat deep fryer to 365 degrees or cast iron pan over medium high heat with 2 inches peanut oil. Season soy flour with salt and pepper. Dredge oysters in soy flour and deep fry 3 - 4 minutes each piece until golden brown. Place on cooling rack. Mix sour cream, cilantro and lime juice in food processor. Serve with hot oysters.

Yields 6 servings (2 oysters each) - approximately 3.5 net carbs per serving
