Almond Lace Cookies

1 cup almonds - chopped
6 tbsp. butter
6 tbsp. soy flour
1 cup low carb white sweetener
1/4 cup heavy cream
1 tsp. vanilla extract
2 egg whites

Preheat oven to 375 degrees. Grease 2 cookie sheets. Melt butter in saucepan over low heat. Add nuts, soy flour, low carb sweetener, cream, vanilla, egg whites and mix until all ingredients are incorporated. Turn heat off. Place tablespoon drop of batter 3 inches apart on cookie sheets. Bake until golden brown around edges about 12 minutes. Cool cookies on rack and serve. Makes 16 cookies.

Yields 16 servings - approximately 1 net carb per serving
